4 Seasonal Dishes Paired with Wine: Perfect for Spoiling Mum

With Mother’s Day almost here our thoughts are turning to the many ways we can show our appreciation to the mother figures in our lives. Aimee from our Perth team recalled a favourite family celebration when she visited her mum with a slow cooker of Coq au Vin and a bottle of wine to share for dinner. At Singlefile, we enjoy good food almost as much as good wine, and we are happy to share some of the recipe ideas that the Singlefile mums love, with some suggestions for matching wines, of course!

An autumnal starter, perfectly paired with sparkling wine

Treat mum with a celebratory bottle of bubbles, ideal with this light starter using seasonal green beans and tender poached salmon. From one of our favourite chefs, Yotam Ottolenghi, this Poached Salmon Salad with French Beans & Barley combines chewy, nutty pearl barley with bright, tender-crisp beans, a tumble of green herbs and blushing pink salmon. This light and refreshing salad is perfectly matched with Singlefile’s 'The Great Southern' Sparkling. The delicate flavours of the poached salmon and fresh vegetables are complemented by the elegant bead of the wine, which helps to cut through the richness of the fish. The natural acidity of the wine presents as bright citrus notes which enhance the lemony dressing of the salad.  

A Sunday lunch for the Chardonnay lover

This is a perfect dish to prepare ahead and then bring along to roast for Sunday lunch. To serve this succulent Roast Chicken with Jerusalem Artichoke and Lemon, in the morning, cook the Jerusalem artichokes until just tender, and combine with chicken pieces and aromatics to marinate for a few hours. When you arrive at mum’s place, the dish needs only 45 minutes in the oven, a squeeze of lemon and some fresh herbs to complete. Serve with some green salad leaves, crusty bread, and a glass of chardonnay. We recommend pairing this dish with our Family Reserve Chardonnay. The richness of the chicken and earthy sweetness of the Jerusalem artichokes are beautifully complemented by the buttery texture and citrus notes of the chardonnay. Oak aged notes add depth to the dish, while its acidity cuts through the richness of the roasted flavours. 

A slow cooked dinner for a cool autumn evening

If your mum loves a glass of red wine, these Slow Cooked Lamb Shanks in a Red Wine Sauce are the perfect pairing. An impressive but simple recipe, this is another dish which is well suited to prepare in advance - even the day before - to allow the flavours to develop before simply reheating to serve. For this hearty and comforting dish, we suggest pairing with a robust wine such as Singlefile’s Single Vineyard Frankland River Cabernet Sauvignon. The tannins and mouth-filling dark fruit flavours ensure that the wine can stand up to the richness of the dish, while the herbal notes in the wine are a perfect complement to slow roasted lamb, creating a complex and flavourful pairing. 

An indulgent dessert to finish

No meal is complete without a sweet finish, and there are few as decadent as a Chocolate Lava Cake. This recipe has been shared by our friends at Cuvée Chocolate, bean-to-bar artisanal chocolate makers in Melbourne from whom we source the quality chocolates for our Coco d’Vino wine and chocolate pairing flight at our Cellar Door. The batter is best made the day before serving, so prepare it the night before and bring it along to bake after Mother’s Day lunch, when the family can give you some moral support while unmoulding your (hopefully!) perfectly oozing desserts. This cake pairs beautifully with our Great Southern Malbec with its highly perfumed nose of dark berries and subtle chocolate notes, and juicy red fruit flavour to complement the rich, dark chocolate.
