To cook the perfect steak - Alan Johnson, Head Chef, Mayfair Lane

First, head to a good butcher and buy the best steaks.  You want a steak 2-3 centimetres thick.

To cook the steak, take the steaks out of the fridge at least 1 hour before cooking, to allow the meat to come to room temperature.

Season the steak with good quality salt and freshly ground black pepper

Heat the frying pan till very hot, add a little vegetable oil. Swirl the oil around the pan to cover the entire cooking surface.

Place the steak in the pan and cook on one side for 3 to 5 minutes, depending on how you like your steak. During this time do not move the steak, allowing the steak to caramelise on the outside.

Turn the steak over and cook on the other side for 3 to 5 minutes, depending on how you like your steak cooked. Again do not move the steak while cooking.

Remove the steak when cooked to your liking, and place the steak on a wire rack in a warm place in the kitchen. Leave the steak for 5 minutes to allow the meat to rest and tenderise.

When ready to serve reheat the steak either in a pan or in the oven on 200c for 2 minutes and serve with your favourite accompaniments.
