2020 Singlefile Great Southern Cabernet Sauvignon Merlot
VINEYARD & WINEMAKING
This wine is a classic Bordeaux blend of cabernet sauvignon (48%), merlot (38%) and petit verdot (14%). The fruit was picked and sorted in late March 2020. The three varietal parcels were cold soaked in small fermenters for three days before undergoing an extended and gentle maceration. This was done to soften the tannins. Approximately 30% of the wine was matured in new 225L Bordeaux oak barriques. The balance went to aged Bordeaux barriques. The wine was matured in oak for thirteen months before final blending and bottling in October 2021.
This wine displays bright and lifted aromas of dark berry, cassis and mocha, with gentle oak support. The wine is alluring in its delicacy but also carries serious power. It is both effortlessly mouth filling with juicy red fruit flavours as well as being balanced with acidity and fine-grained tannins which lead to a long finish. It has nice palate weight and is well suited to red meat dishes such as a roast leg of lamb with garlic and herbs. It will improve with further time in bottle.
