VINEYARD & WINEMAKING
The cool climate of the Great Southern wine region is well suited to the viticulture and vinification of chardonnay and pinot noir for premium sparkling wine, particularly in the more southerly vineyards of the region. The fruit for this sparkling is predominantly pinot noir, with a small amount of barrel aged chardonnay which adds texture and sophistication.
The wine is crafted in a refreshing style which brings focus to the vibrancy and natural acidity of the fruit.
THE WINE
The wine is pale yellow and bright in colour, with a well-defined bead. The aromatics show elements of citrus and green apple, with white blossom and tart raspberry, and subtle notes of toasted bread. On the palate, flavours of tart Granny Smith apple and fresh citrus are immediate, with a subtle brioche character, and a delicate hint of strawberry, leading to a lingering, clean finish. This is a dry and zesty wine which is an ideal apéritif style, and would also make a lovely pairing with fried appetisers, mushroom dishes, or crusty bread and dukkah.
