2021 Singlefile Great Southern Fiano

The Great Southern delivered excellent growing conditions, with winter and spring being reasonably dry and summer holding cooler temperatures.
We pressed the fiano juice and it underwent a long and slow cold fermentation in a stainless steel tank immediately after pressing to preserve its fruit characters. The wine was racked off its lees immediately after fermentation to retain its subtle texture and crisp finish before being bottled in July 2021.
A lighter style fiano with lifted aromas of spice, floral and honey characters. These follow through on the palate with a dash of nuttiness, medium weight and a subtly textured mouth feel. This wine is well suited to complement light, fresh white meat and seafood dishes. Enjoy now or allow the wine to continue to develop in the bottle for 5 years.
