2017 Singlefile Great Southern Cabernet Sauvignon Merlot
VINEYARD & WINEMAKING
The 2017 winter saw lots of rainfall that continued into spring. Summer was dry and warm with some big rains in February 2017. These provided plenty of water for the vines, providing excellent growing conditions which resulted in high quality juicy, fresh and vibrant shiraz. Ripeness was achieved at relatively low sugar levels.
This wine is a blend of 91% cabernet sauvignon, 6% merlot and 3% malbec. The fruit was picked and sorted in mid April 2017. It was cold soaked in small fermenters for twelve days before undergoing an extended and gentle maceration allowing for the softening of the tannins. Forty percent of the wine was matured in new Bordeaux oak barriques. The balance went to one year old (30%) and two year old (30%) Bordeaux barriques for ten months maturation before blending.
This wine displays bright and lifted aromas of dark berry and bay leaf, and gentle oak support. The wine is effortlessly mouth filling with juicy red fruit flavours balanced with acidity and gentle fine grained tannins which lead to a long finish. It is well suited to red meat dishes such as a roast leg of lamb with garlic and herbs. It will continue to develop in the bottle for eight to ten years.
