Singlefile Wines

Great Southern Collection

Singlefile’s Great Southern collection is based on crafting superlative wines from the best regional parcels from our region.

The fruit for this Riesling enjoys a long, cool ripening period and is selected from small parcels across vineyards in the Great Southern. The grapes undergo a long, slow, cold fermentation in stainless steel tanks after pressing to preserve the complex fruit characters. Gentle lees stirring is carried out, which adds a subtle texture to the wine.

Made with fruit from selected vineyards in the Great Southern region, this fresh, dry, aromatic wine showcases the varietal characteristics of this classic Western Australian blend. The exact portions of Semillon and Sauvignon vary from vintage to vintage to consistently produce a wine with structure and length of flavour.

A lighter style fiano with lifted aromas of spice, floral and honey characters. These follow through on the palate with a dash of nuttiness, medium weight and a subtly textured mouth feel. This wine is well suited to complement light, fresh white meat and seafood dishes

The wine displays summer florals, some green apple and subtle orange blossom characters. The mouth feel is textural with a soft, sea spray minerality, some savoury tones and good natural acidity.

This now-popular style of cool-climate Chardonnay was made famous in France's Burgundy region. The cool climate of the Great Southern allows Chardonnay's natural acidity to develop slowly, to produce lean, racy wines of pure-fruit sharpness and complexity.

This is a more serious, dry, Provence style rose using predominantly Mediterranean varietals. Pale pink in colour, this is a contemporary style of dry rosé; nuanced and delicate flavours of wild strawberries, sour cherries and spices. It is long in flavour with delicate savoury elements. It provides a persistent, textural and dry finish. Best enjoyed chilled.

The wine displays the hallmark characteristics of the Nouveau style. Intense, lifted strawberry and confectionary aromatics with some earthy/mushroom notes. The palate is lively and supple with little tannin influence. Its complexity and intriguing character is gained through the natural fruit intensity and the unique fermentation process. Best enjoyed as a young wine and at approximately 12°C.

This medium bodied wine displays earthy, spicy, forest floor notes, with savoury hints and gentle oak support. The wine is effortlessly mouth filling with a savouriness balanced with acidity and gentle fine grained tannins which lead to a long finish.

This wine displays bright and lifted aromas of dark berries and spicy oak support. The wine is effortlessly mouth filling with juicy red fruit flavours balanced with acidity and gentle fine grained tannins which lead to a long finish.

This blend of Cabernet Sauvignon and Merlot varies from vintage to vintage. The fruit is picked and sorted before being cold soaked in small fermenters. It then undergoes an extended and gentle maceration allowing for the softening of the tannins.
