The colour is light and pristine, and the aromatics display powerful lemon and lime with enticing notes of honey. A dry riesling, the wine displays intense lime and lemon blossom flavours with lively, flinty minerality (which will develop further with age). The wine has a crisp, tingling finish, with a lingering lemony acidity.

Pale quartz in colour this wine shows beautiful lemon sherbet and lime zest aromatics with subtle hints of sea-salt and a talc, chalky minerality. The acidity is tight knit whereby the palate is characterised by the natural acidic drive, with citrus flavours flowing through the length of the palate. There is superb drive, length and balance to this wine. It will develop further over 20 years.

The palate displays a subtle richness while still retaining the freshness that one comes to expect from good sauvignon blanc. Fruit flavours linger on the palate and the wine has a refreshing, clean finish.

Given the warm Australian climate, it seemed only natural to explore producing a light red wine that is enjoyed chilled. This Singlefile Great Southern Chilled Red is made in a ‘Nouveau style’ and has bright, fresh red fruit flavours.

This wine is a blend of the classic Rhône varieties of mataro, shiraz, and grenache . It comes alive with bright, perfumed aromatics, a plush palate, smooth mouthfeel and fine-grained chewy tannins. Its perfect match is slow-cooked lamb shanks with steamed veggies and creamy mashed potato.

This grenache asks for your attention by drawing you to its pretty perfumes and red berry, cranberry-like, aromatics. It also shows subtle secondary aromas of spices, and earthy and herbal undertones.

The wine is a deep raspberry colour. The aromatics display notes of dark plum and charry oak with subtle cool climate spicy undertones and savoury notes. The palate is effortlessly smooth and displays black berry fruit characters flowing through to a subtle spicy finish balanced by ripe soft tannins leaving a surprisingly long finish.

As a specialist chardonnay and pinot noir producer we take the production of our sparkling wine very seriously. This sparkling has delicate aromas of flint, citrus, honey, and almond nougat, reflecting the time spent on lees. On the palate, it has a fine bead and an elegance due to the natural acidity of the wine, presenting as the crisp freshness of Granny Smith apples and citrus zest. It also shows some subtle complexity.

A slightly sweeter gin in the vein of a “Sloe” style, but with no added sugar and only the natural sweetness of the Great Southern pinot noir grapes. The result is a jammy, robust gin with pepper notes and a beautiful tannin finish. It drinks as a sipping gin, mixed with a dry ginger ale or blended with Vermouth and Campari for a “Pinot Negroni”.
